5 Fast & Easy Healthy Gluten-Free Meal Ideas

It’s great to have a handful of staple meals everyone loves that are also easy to whip up. Eating healthy is super easy when you’re chowing down on recipes that are delicious and flavor-packed. The key to success is planning and routine married with variety. So, to help you on your quest to healthiness, here five of my family’s favorite fast, easy, and healthy dinners.

Who doesn’t love a taco? The beauty of a taco is its versatility. Lettuce wraps can be just as tasty and varied. Both are fast – they just require a seasoned cooked meat of choice and lots of toppings and condiments. We have Taco Tuesday in our home weekly and it morphs from week to week.

Fish is a great option for a quick dinner. Pair it with some lemon, herbs, and thinly sliced veggies, wrap it all in parchment to make a packet, place it on a baking sheet and into the oven to cook. Once you get the hang of it, it takes no time at all and each individual family can make their own unique packet.

Stir Fry

Stir fry is so versatile and just about everyone loves it. You can really use any type of meat: beef, pork, chicken, fish, shrimp, and a wide variety of vegetables. When you are busy, just pull out some frozen veggies to go with your choice of already sliced meat and marinade as you go. Serve with or without rice. Rice cooks up fast in the Instant Pot. This whole meal could take 20 minutes.

Dinner Salad

This is my favorite way to get two of my pickiest eaters to get in more veggies. They love dinner salads, whether it’s taco salad, Caesar salad, or grilled meat and lots of varied vegetables, whatever is in season or freshest at the store. Homemade dressing takes two minutes to whip up as well. Once you have a few basic dressing recipes down, you will never go back to store-bought again.

What’s quicker than whipping up eggs? Not to mention, everyone always has eggs on hand. All you need is leftover vegetables or even frozen vegetables, fresh or dried herbs, cheese, or other meat and you’ve got all you need. Pair it with a side salad of baby greens to get your daily folate. An easy meal without much effort.
