How to Make a Wonderful Summer Vegetable Soup

Enjoy the simplicity of this loaded with garden goodness, nutritious and satiating soup!

I don’t know about you, but I love soup any time of the year, but especially in the summer, when the produce is plentiful.

I concocted this recipe (last summer) when I needed to find a way to use the plethora of fresh veggies coming out of my ears.

Easily digestible and you can greatly benefit from the vital nutrients, minerals, and trace minerals in a nicely simmered pot of soup.

How to Make a Wonderful Summer Vegetable Soup //

Summer Vegetable Soup 3 Ways
Recipe type: Soup
  • Summer Garden Soup:
  • 1 lb ground turkey
  • 2 quarts chicken broth (made in pressure cooker)
  • 1 medium summer squash, diced
  • 2 big handfuls green beans
  • 5-6 tomatoes, chopped (a variety of colors/types)
  • 1 large handful fresh basil, minced
  • Himalayan pink salt
  • Few dashes of Concentrace Mineral Drops
  • Nightshade-Free Version:
  • 1 lb ground turkey or ground beef
  • 2 quarts chicken broth (made in pressure cooker)
  • 2-3 medium summer squash (yellow squash, zucchini or pattypan), diced
  • 4-6 cups spinach or kale, minced
  • 1 cup fresh basil, minced
  • About ½ cup chives, minced
  • 2 tsp.ground turmeric
  • Himalayan pink salt
  • Topped with cubed avocado
  • Lentil Version:
  • Use ½ lb lentils (or black-eyed peas) instead of the turkey.
  1. Brown turkey in a bit of fat.
  2. Add remaining ingredients and simmer until all veggies are tender, about 20-30 minutes. Easy peasy!
  3. Instant Pot Directions: Once the meat is browned, add all remaining ingredients, place lid on for pressure, choose manual for 12 minutes.

This is such a simple soup that everyone will enjoy, especially since I’ve included three variations. The soup can be enjoyed in large batches, and then frozen into glass Pyrex serving size containers for later. Creating a ‘food savings’ so to speak.

Because this is a very easy to assimilate meal, loaded with plenty of nutrition, it’s a great option for those in adrenal fatigue. Your digestion will thank you too!
