Perfect Instant Pot Quinoa

  • 2 cups quinoa (any color)
  • 2 pinches salt
  • 3 cups chicken broth or water
  • Juice of one lemon
  • *Optional: handful of minced fresh herbs of your choice
  1. Rinse the quinoa well. Optimally, soak it overnight in filtered water with a tablespoon of lemon juice or apple cider vinegar, then strain. This step will help you to digest the quinoa better.
  2. Add the quinoa, lemon juice, salt, broth, and herbs, if using, to your Instant Pot insert.
  3. Close and lock the lid. Press [Manual] and then use the [-] button to choose 1 minute of pressure cooking time.
  4. When the time is up allow it to go for 10 minutes more. Release pressure valve, open and serve.
